Carrot Cakes - Basic & Stacked

Just a basic Carrot Cake for our C4 group, my son calles it 'Mummy Craft', but really if the truth be told there is very little craft going on at the moment.

And then there is a stacked Carrot Cake, which has a total of 4 torts, a little too high but still impressive.

Carrot Cake Cupcakes


I love carrot cake, its sweet and morish, and makes a change from chocolate. This concoction is just my favourite carrot cake recipe which I have broken down into the cupcake liners, simple, easy, classic. What makes them even better is creamed cheese frosting. The perfect balance of cheese, sugar, butter and loads of vanilla and just a dash of cream to cut through the sweetness and to help get that perfect piping consistency. A sifting of cinamon and a sprinkle of raw sugar and I am in heaven.

Bling Cake - 60th Wedding Aniversary Cake

My Nanna and Poppa celebrated their 60th Wedding Aniversary with a devine lunch and a Bling Cake. Classic American Carrot Cake frosted with delicious Vanilla Creamed Cheese and styled with 'fake' diamonds and white glitter, the perfect end to a fabulous lunch and a wonderful function.

The photo does not do it justice, its really hard to get good pictures of light cakes. But it was loved by all and unfortunately there was not much left over for that night s dessert.

60th Birthday Cake

2 layers of Orange Buttercake with 1 layer of Carrot Cake, filled with Maramlade Italian Buttercream. Finished with Vanilla Italian Buttercream, gold edible glitter and white choclate dots. The 60 is made from modelling paste and spikes are the candles.
